Food processing wastewater treatment with MBR

Food plants face tightening sewer limits and surcharges, and many want to reuse water. A membrane bioreactor can treat variable, high-strength food wastewater in a compact footprint.

Variety is the challenge

Produce washing brings soil and starch; meat and poultry bring blood, fat and protein; snack and sauce plants bring oil, salt and sugar. Flows swing with shifts and sanitation. A design that works for one plant can fail at another, so characterizing the stream over a few weeks is valuable.

A Swing module: standard cartridges sized to your flow, with room to add more as demand grows. See the Swing MBR page.

A robust treatment train

Typical trains use screening, FOG removal, equalization, an MBR for biological treatment and solids separation, then disinfection or RO for reuse. MBR tolerates bulking sludge and keeps effluent TSS low even during upsets that would wash solids out of a clarifier.

Zyramic options

Swing and Palisade flat-sheet modules suit most food streams; ceramic modules can be evaluated for hot or aggressive streams. Explore related pages for dairy and brewery wastewater.

What operators look for

Operators at a food plant usually want the same things: effluent that consistently meets discharge or reuse limits, solids separation that does not depend on how well sludge settles, and predictable sewer charges. The feed usually carries fats, starches, salt and organic solids, and the system has to cope with product changeovers and washdown surges. With membranes, they also look for durable sheets, easy inspection and replacement on a schedule they can plan.

  • Consistent, permit-ready effluent
  • Manageable cleaning routines
  • Planned, predictable membrane replacement
  • A compact footprint

How flat-sheet MBR can help

A membrane bioreactor replaces the clarifier with a physical barrier, so effluent quality depends far less on how well the sludge settles. That can make a food plant system more forgiving of product changeovers and washdown surges. Flat-sheet modules are generally easy to inspect, clean in place and handle without special tools.

Zyramic modules are built around three durability choices. Smaller membrane sheets flex less in service, which can mean less wear, and a damaged sheet takes less area out of service. Strong wide membrane welds are designed to resist delamination. A thick membrane, about 250 microns including support, is meant to stand up to solids and handling. Actual life and flux depend on pretreatment, design and operation, so we size each project individually.

More questions owners ask

Is an MBR hard to run at a food plant?

Most operators find a well-designed MBR manageable with routine checks and periodic cleaning. Good screening and equalization upstream make the biggest difference.

Can we try it before committing?

For US projects, rental and pilot modules may be available so you can test on your own wastewater.

Can your membranes go into our existing tank?

Often, yes. Replacement flat-sheet membranes fit many existing cassettes; send us drawings and we will check fit.

Mild backwash (special cases only)
Backwashing is not a standard Swing operating mode and is not meant for routine use. Swing has been pressure-tested to 14.5 psi (1 bar) and held without breaking. If a site is in a bind even after relaxation and CIP, contact us; we may be able to work out a special mild-backwash procedure.

Worked sizing example

Take a vegetable processor at 132,086 gpd (500 m³/day):

This is an illustration only; a real design also checks temperature, MLSS, redundancy and the cleaning schedule.

Tips for a smooth project

  • Plan for peaks from batch and cleaning discharges
  • Size equalization and pH control generously
  • Keep fats, lint and solids upstream of the membrane tank
  • Use pilot data to choose design flux

Next step

Industrial and special-purpose plants vary widely, so every first conversation starts with fact-finding. A few weeks of flow and lab data, even rough, makes our recommendation far more reliable. Where questions remain, a pilot or a measured first phase is a good way forward.

Sizing considerations

To give a useful recommendation we usually need:

  • Product types and sanitation schedule
  • Flow and load variation
  • FOG and salt content
  • Current pretreatment
  • Discharge or reuse goals

Most relevant product: Swing MBR. See also replacement membranes, rentals and how to choose.

Performance and life depend on pretreatment, design flux and operation; flux figures are Zyramic design guidance, sized to each project.

Frequently asked questions

Does salt affect MBR?

High or fluctuating salinity can stress the biology; steady conditions help.

Can MBR meet direct discharge limits?

Often, with nutrient removal and disinfection as needed.

Can we rent for a pilot?

Yes, in the US.

What about hot wastewater?

Cooling or ceramic membranes may be needed; tell us the temperature.

Can MBR reduce surcharges?

Lowering BOD and TSS before discharge often reduces surcharges; the effect depends on local rates.

How do we handle sanitation peaks?

Equalization sized for the sanitation shift smooths both flow and chemical swings.
